This is culled meat.
In the US both meat chickens and egg-laying hens (often too tough for meat) were culled from bird flu.
Culled meat is still deemed safe for human consumption, but it means most of the birds were malnourished, stressed, ill, or simply old hens that weren’t raised for meat.
It’s been such a bad epidemic that *a lot* of the US supply is this stringy, tough, saw dusty chicken meat right now.
It’s expected to persist because not only is the epidemic among farm animals still ongoing, but, the malnourished and ill birds apparently gave birth to a much poorer health generation of chickens.
So while egg production is starting to increase again, you can expect to pay top dollar for some pretty subpar chicken for a while.
